Will never buy pasta sauce again. Ever.

Or, at least while tomatoes are in season. We had a couple of ripe tomatoes from our garden and my neighbor brought a TON of tomatoes over from his garden. We also have an abundance of fresh basil from our garden. All these fresh tomatoes are fabulous, however; the hubs doesn't like tomatoes unless they are cooked. Hmm....what to do with all of these tomatoes? Make fresh pasta sauce! I can't believe that I had never done this yet. It.was.amazing. This was seriously the best pasta sauce I've had since I've been in Italy and that was about six years ago. The sauce was so fresh, so flavorful and so amaaaaaaaaazing. You HAVE to make this and make it soon. You will fall in love and will never buy pasta sauce again. Ever.

Ingredients

1 tablespoon butter
8 small tomatoes, diced (I had 1 yellow tomato which is why you see yellow in the pic)
1/4 cup chopped fresh basil
1 teaspoon olive oil
1 teaspoon garlic salt
salt and ground black pepper to taste
1 tablespoon all-purpose flour
1/4 cup water
1 clove garlic, grated

Directions

Melt the butter in a large skillet over medium heat; cook the tomatoes in the melted butter until they begin to fall apart, 5 to 7 minutes.


Add the basil, olive oil, garlic salt, salt, and pepper.


Slowly stir the flour into the mixture and cook until it begins to thicken, 5 to 7 minutes.


Stir the water through the mixture to break up any lumps of the flour. Mix the garlic into the sauce and simmer another 5 minutes. Serve hot.

*I served with TJ's turkey meatballs (yum!). I put them in the sauce while it was simmering to warm them up. Served the sauce and meatballs over whole wheat penne. Most.amazing.pasta.I.have.had.in.six.years. End of story.

What are you doing good for your heart today? I'm off to the gym soon to lift some weights, then getting outside to enjoy this FABULOUS weather...it is 62 degrees outside...what?! This is amazing esp. after our 100 degree temps just a couple days ago! I will be heading off for a nice, long walk. This is perfect running weather, but I'm not there yet...ugh. Ahh...

  1. Looks SO good! If I can ever get some ripe tomatoes, will give it a try! Or better yet....headed to Farmer's Mkt. tomorrow! :)

  2. This is awesome! Do you think I could make a big batch of this, freeze it, and use it as needed?

    I've been trying to get out of my store bought pasta sauce slump!

  4. I made this tonight with tomatoes from our garden and it was fabulous. Will definitely be making some towards the end of season to freeze for later. Thanks for the recipe!
