Cajun Cabbage Casserole with Pear Salad

It's been another busy week, so I sadly have not been doing much cooking. Thankfully our refrigerator is slammed packed with wonderful leftovers (red beans and rice, pork chops, etc.), so these have been our quick and easy re-heat dinners! I did have time last night to make a recipe I got from my Mother in law's blog (Susie). The casserole has cabbage, chicken, onions, mushrooms, cream of celery and mushroom soup, brown rice and panko...all of these things I love, so I had to try it. It was especially perfect on a cold, rainy evening. Along with casserole, we had my mother in law's pear salad. I used spinach, canned pears and toasted almonds....made my own pear vinaigrette to go along with this. Perfect side to the casserole!

  1. I am so happy you enjoyed the casserole.My apologies on the quantity! Having grown up in a family of six kids, and feeding five of my own, I have never perfected the art of small meals. I only cook platoon size!
